Wood Fire Grilled Bone-In Ribeye

Ingredients

1 1/2” thick bone-in ribeye
Salt and pepper

Prepare the steak by seasoning generously with salt and pepper. Let come to room temperature.

Build and light a fire in your Cru oven. Allow fire to burn down to mostly coals, some flame is great and you will find your personal preference for a coal to flame ratio as your experience with this technique increases. Evenly spread the coals over the entire oven floor/stone and carefully place the Cru grilling grid directly over the coals. If using a Cru 32, place the Cru 32 half door to preheat the grilling grid. Preheat for 10 minutes.

When ready, take the oven door off and place the steak directly onto the grilling grid. For medium rare steak, cook 3 to 3 1/2 minutes per side. Use a pen thermometer to check for desired doneness:

Rare: 120°F
Medium Rare: 130°F
Medium: 140°F
Well Done: 160°F +
